Douloufakis Sparkling wine, to accompany each of your celebrations

This is an excellent sparkling white wine to mark your special celebrations !

It was produced 100% from Vidiano grapes, an indigenous Cretan variety, vintage 2015. We chose grapes from a specific vineyard of 550m altitude of loamy soil, fine gravel and calcium content in order to have a base wine suitable for sparkling.
We applied traditional "Méthode Champenoise".
On first fermentation we ‘ve got a base wine, with high acidity and low PH (to withstand ageing). It formed a neutral aromatic profile and strong body, to be the base wine suitable for the sparkling.
A second fermentation followed later in the bottle.
This sparkling wine remained on lees {sur lies fines} for 24 more months. Disgorging was completed in May 2018 by selecting a liqueur d`expedition to have a brut wine regarding sugars.
